Meet the mushrooms
Oyster
With a velvety, dense texture, the oyster sports a 10% protein content by dry weight, as well as the health benefit of the potential to dramatically lower blood pressure with efficacy similar to prescribed medications.* It also has many applications in bio-remediation, which is the process of using living organisms to clean up environmental pollutants, such as oil and chemical spills.
Lions Mane
The lions mane is by far the most striking of all of our mushrooms, and by some accounts the most delicious. It has a dense, meaty texture that tastes similar to shellfish and is a fantastic meat substitute for vegans and vegetarians. This showstopper has up to 20% protein by dry weight. Unlike our other varieties, the lions mane is a tooth fungus that disperses its spores through its many spines instead of the typical gills. They contain the mycochemicals, hericenone and erinacine, both of which have shown to promote nerve growth factor synthesis.*
King Oyster
As a close relative of the oyster mushroom, the king oyster truly does reign supreme in both texture and flavor. Like the lions mane it also has a very seafood like flavor and sports a large, edible stem as well as a dense, meaty cap. A popular preparation is slicing these down the middle and searing like a steak or cutting the stems into medallions and searing like scallops.
